  1. Looks nice, good negative space usage, lots of different textures implied…if I had to change anything I’d say a small pop of color would go a long way…looks great tho Chef

    I really love it, but damn, I really wish the skidmark trend would go away. It’s not just that the wipes look a bit like poop. The other issue is that for a desert like this, it doesn’t serve a purpose. You worked hard to get that sauce just right, but it can’t really be eaten properly. There is nothing to eat it with. Only thing you can do as a diner is to scrape it with a fork a bit but there isn’t much to scrape off. Functionally, it’s like the stuff that’s leftover on the plate after you’ve already eaten the desert.

    But I really like the rest of it.

  3. Personally I’d like to see a smaller plate. Make your mousse the star of the show instead of all the white space on the plate. I have mixed feelings about the schmear on the plate. On one hand it brings the eye to the main event, on the other hand it’s played out and can’t be eaten. I’d like to see a pop of color… maybe a few hibiscus blooms instead of the schmear for that pop of color and visual interest you’re trying to provide

    Agree about changing the swipe to a functional sauce application. Also might caramelize the hazelnuts to give another shade of color a flavor

    It looks delicious!! But i do agree that the swipe is not very appetizing lol. Have you tried doing like a zigzag pattern or a wavey swipe type of thing on it instead of just going across?!? They have these really cool Acrylic Pour swipe tools that a chef of mines been using that gives it a really cool look! Either way, good job!!

  6. This looks stunning, except the triangle and the whipped cream on top. Everything else is very precise and smooth, but the cream looks both old-fashioned and coarse (almost grainy) and the triangles (ist that meringue you piped and broke into pieces?) overlapping like that seem like an afterthought.

    I agree that the wipe is not ideal, but I don’t mind as much, I’d be scratching you plate getting all that sauce off. More your problem than mine, really.

  8. Personally I love everything about how this dish looks (then again, I don’t think I’m seasoned enough to have seen the “skid mark trend” too many times)

  9. Just noticed you said you made this in culinary school. Def agree that the swipe is unappealing, but for just schooling this is very impressive. I still suck at pastry’s.

  10. I did not know that the swipe was so hated in the community. Will not be doing it again 🙂 also can’t unsee the skid mark now
