The recipe calls for cooking them in some oil, but in my experience a good non-stick pan and a little spray oil work just as well.

Omg 😱 this is the recipe I have been waiting for!!! I have been looking for so long for a vegan version of the traditional zucchini pancakes from my early childhood that were made with eggs and Parmesan cheese… now I found it! I can’t wait to try it out, I’m going to make it today! Thank you 😋
