Veggies: Snow peas, carrot, baby corn. Used 1/4 of this rice blend: 1 bag of Green Giant Cauli Rice + 1/2 cup real rice.
Used some of the Gardein Mandarin Chik’n sauce with the veggies & a dash of soy sauce.

I think I would just eat the chicken and veggies without the rice, or maybe a tiny bit of cauliflower rice to absorb the sauce. So nice to see baby corn and snow peas in a recipe- I almost always have them on hand- they’re low calorie, high volume and delicious! Maybe try adding water chestnuts? Just trying to think of what I have in my pantry… might be good for something crispy!
