  1. My go-to basic donut recipe for any favorite flavors! No-Knead & Super easy and convenient to make, you will end up with soft (with chewy texture inside) donuts every time.

    **Ingredients:**

    * 1 ¾ Cup – 230 gr Bread Flour
    * 0.6 Cup – 140ml Warm Whole Milk
    * ½ Egg (~25gr)
    * ½ tsp – 3gr Instant Yeast
    * 1 Tbsp -15gr Unsalted Butter
    * 1 Tbsp + 1 tsp – 20 gr Sugar
    * ¼ tsp – 2 gr Salt
    * 1 tsp Lemon Juice + 1 tsp Lemon Zest (Optional)

    * Microwave milk 30s to make it warm – Combine 1 tsp sugar + salt + egg + lemon juice + instant yeast => Mix well, and let it sit for 10 mins.
    * Combine flour + 1 Tbsp sugar + lemon zest in the bowl. Pour the prepared milk mixture. Mix until it becomes a dough. If the dough is too wet, add 1 Tbsp flour at one time.
    * Chill for 20 mins. Take out, fold the dough with a spatula 10 times, then add softened butter. Mix until well combined.
    * Chill for another 20 mins. Fold the dough with a spatula the dough 15 times.
    * Proof for 60-90 mins or double in size.
    * Shaping: Deflate the dough to release air bubbles. Divide into 8 equal pieces. Use a bottle cap to cut a hole.
    * Proof for 30 mins before frying.
    * When the oil reaches 320F – 160C, adjust the heat to Low. Put the donut in, and fry until it has yellow-brown. Turn over and fry for another 2-3 mins. Take out when it becomes yellow-brown on both sides.
    * When it’s still warm, coat with granulated sugar (& cinnamon) or enjoy with any favorite flavors (chocolate, matcha,…)
