    Red potatoes – 4lb
    Mayonnaise – ¾ cup
    Apple cider vinegar – 3 ½ tablespoons
    Sriracha sauce 2 ½ tablespoons
    Dijon mustard – 2 ½ tablespoon
    Greek yogurt – ¾ cup
    Green onion ( chopped ) – 4 sprigs
    Salt and pepper – to taste

    Start by boiling potatoes. I prefer to go with red potatoes as they are high in moisture and low on starch. I normally cook potatoes in the Instant Pot which is a lot faster. I set Instant Pot for 7 min and wait for natural pressure release. However you can boil potatoes using any other method you prefer.
    Make the sauce by combining apple cider vinegar, mayo, greek yogurt, sriracha sauce, and dijon mustard. Mix it all very well together.
    In a large bowl combine cooked potatoes and sauce. You can pre cut potatoes or do it with a knife or a spoon while mixing it all together.
    Add some salt & pepper to taste and mix in green onions.
    Very simple and not your traditional potato salad. This one has a nice spicy kick to it……you will love it.
