In Italy, (at least in Bologna, where I live), we call it “Pasta al ragù ” which means pasta with ragù.
The ragù is the things that around the world is called bolognese sauce.

How do you get that consistency of sauce on the noodles? Do you finish cooking the noodles in the sauce or something?
