My wife and I have been gifted a whole Gouda cheese wheel. What is the best way to cut it and preserve it as it is being used?

Basically what the title says. Should I cut it into small pieces and put in ziplock bags? Vacuum sealed? Can it / should it be frozen? Thanks in advance!!

Ima put yall onto my fav peak ice cream! The serving size is 3!! And each one is like 40 calories and they taste like chocolate pudding cups! So good, I usually only eat one or two when I want ice cream,6g of fiber and 4g of protien per serving!!fudge pops!!
