You can add more protein—I usually like higher protein and calorie meals but I was just using what I had 🙂 It’a often made with pork, but I made a vegan version with a konbu (dried seaweed) and shiitake mushroom broth.
Only my second time making this and it’s delicious and filling! Recommend if you love spicy, warming broths that just make you happy inside.

Soondubu jjigae is one of my absolute favorites! I’ve never attempted to make it myself before though; it seemed so intimidating!
