I love that stuff so much. My husband requested strawberry banana pancakes when he was hungover a few weeks ago, and so I made something up. I mashed up a fluffy banana pancake recipe with the kodiak cake mix, and the result was so damn tasty, here’s what I did:
Mash 2 medium bananas, mix with 1 large egg, ~3/4 cup unsweetened vanilla almond milk and 1 tsp vanila. In another bowl mix together 1 cup kodiak cakes mix, 1.5 tsp cinnamon, 1 tsp baking powder. Combine wet and dry, add more almond milk if the mix is too thick. I cooked my husband’s pancakes just like that, and added a handful of chopped walnuts to mine for banana-nut pancakes.
They were SO FLUFFY, SO MOIST, SO TASTY. The whole thing made 8 pancakes (roughly 115 cals and 5.25 g of protein per pancake with walnuts, 90 cals and 4.75 g protein without walnuts), and 2 filled me right up.
