Another option: caramelize it, deglaze with Madeira (or the booze of your choice), add cream, take it off the heat and add grated cheese. Layer on flatbread, add more cheese, broil until melted and bubbly.

You can leave them and use them slowly, bags of onions like this stay good for a long while. You could also make lots of curries or cheese and onion sandwiches. .
