My birthday dinner: Za’atar salmon kebabs, freshly baked pita, homemade hummus, saffron garlic jasmine rice, stuffed grape leaves, spanakopita, tzatziki, cucumber tomato salad, and homemade strawberry lemonade. Dessert is cookies n’ cream chocolate cake

  1. There’s also roasted broccoli + chicken kebabs but they couldn’t fit in frame. This is my personal Superbowl tbh. Dinner inspired by a Mediterranean restaurant I would eat at back when I lived in Portland, OR. 🙂

    * Za’atar salmon kebabs + Lebanese inspired chicken kebabs both have bell pepper, red onion, and zucchini
    * Homemade hummus is by Middle Eats on YT
    * Stuffed grape leaves are Persian style, dolmeh barg mo. Basmati, ground beef, lots of fresh dill/parsley/mint, scallions, sautéed onions, split peas, saffron.
    * Pita bread recipe I use is by Brian Lagerstrom on YT
    * Spanakopita triangles by CookingwithShereen on YT
    * Tzatziki – Persian cucumbers, greek yogurt, lemon juice, lots of fresh dill + mint, olive oil, s+p, and freshly grated garlic
    * Chocolate cake recipe is by “Add a Pinch” food blog. Frosting is Sally’s buttercream frosting but finely blended crushed Oreos. Took about 1/2 of the filling out of them before pulsing through a food processor.

    And these are the best looking home chef pitas I’ve seen!
