Images 2 & 4 – Kaluga (Huso dauricus) Images 3 & 5 – Kaluga Hybrid (Huso dauricus x Acipenser schrenckii)

Had the chance to taste the N25 Kaluga and Kaluga hybrid side to side together with some home made blinis. Kaluga tends to lean more golden, but this particular batch was darker than usual and the contrast was not as pronounced (as seen the pics above).

Flavour wise, the difference was much clearer. The Kaluga was more complex and intense, while the hybrid was milder but noticeably more buttery. In terms of texture the Kaluga had a firmer pop with more distinct beads, while the hybrid was softer and creamier overall.

The Kaluga would probably be great as an occasional treat (in no small part due to the price), but the hybrid doesn’t fall far behind and works just as well for more regular indulgence and entertaining, it is definitely a crowd pleaser.

  2. I don’t mind caviar, it’s funny when it pops and yeah, it tastes like oily cold fish…not great by itself but with eggs or on a cracker or whatever…it’s fine. I’d just never buy it myself, because I think the value for money ratio just isn’t right…I also don’t take any pride or joy in being fancy and shit – so I’d much rather eat a steak or a pizza without posting any photos on social media about it.

    Of course expensive doesnt equate to quality but its also about your own personal value.

    I personally love caviar. But i also appreciate nuances, complex flavor profiles of wine/coffee/beer/cheese etc. I love to cook and try new authentic recipes/cuisines. Im sure this sounds snobby but it brings me happiness. These things arent for everyone but if it gives you joy and wont break the bank, its worth every penny. Ill drop a cool 100-200 on a decent sized tin for a birthday or xmas or something but i also realize you are probably going to experience diminishing returns after that price point… anyway, i def recommend a fat dollop of caviar on sour cream and onion dip with some salt/vin chips and chives.

  4. Those are pancakes. Blini are very thin, the batter has to be runny enough to spread over entire pan surface on its own. I assume these ones have a bit too much flour in them. You should be able to fold or roll blini with ease without breaking, that’s how thin they are.

    Looks good OP. I’ve never had expensive caviar. I’ve had cheaper stuff abd liked it. If I had a lot of disposable income I’d buy it – especially over buying other luxury goods. Good food is good…
