Ingredients for 4 people:

  • 500 g fresh homemade pasta (recipe here) or a pack of store-bought pasta
  • 400 ml heavy cream
  • 200 g porcini mushrooms, rinsed and cut into pieces (or 200 g frozen porcini)
  • 1 handful of dried porcini, rehydrated in a little hot water
  • 50 g Parmesan cheese
  • 4 slices of Bayonne ham, cut into small pieces
  • 1 tablespoon olive oil
  • A few basil leaves
  • Salt, pepper

Preparation:

Prepare your fresh homemade pasta following the recipe indicated here.
Bring a large pot of salted water to a boil.

While the water is heating, prepare the sauce:

In a large pan, heat the oil and add the porcini mushrooms. Season with salt and pepper, then cook for a few minutes, stirring, until they are tender. Add the cream, Parmesan, drained dried porcini, and half of the ham. Season again with salt and pepper and let cook for about 5 minutes, until the cream has thickened.

Cook the pasta for a few minutes, then drain.
Mix with the sauce and serve immediately with some Parmesan, basil, and the remaining ham.
