.) Prep and blanch: wash the chicken wings. Score 2-3 shallow cuts on each side. Place them in a pot and cover with cold water. Add the ginger slices and Shaoxing wine.
.) Boil and skin: bring the pot to a boil over high heat. Let it boil for 1-2 minutes until grey scum forms on the surface. Skim off all scum.
.) Rinse and dry: remove the wings with a slotted spoon and rinse them under cold water. Pat the wings completely dry with paper towel. This is crucial for browning.
.) Pan-fry: heat a large skillet or wok over medium heat. Add oil. Place the wings in the pan and fry for 3-5 minutes per side, until skin is lightly golden brown.
.) Add sauces: add the light soy sauce, oyster sauce and salt. Stir-fry for 30 seconds, tossing the wings to coat them evenly.
.) Braise: pour the can of Coca-Cola. Bring to a boil, then reduce the heat to medium-low. Cover the pan and let it simmer for 15-20 minutes, flipping the wings for once halfway through.
.) Reduce glaze: remove the lid and turn the heat up to high. Let the sauce boil rapidly. Stir and flip the wings constantly for 3-5 minutes. The sauce will thicken into a dark, sticky, bubbly glaze.
