I ate headcheese on a head, well a skull technically. This was at Au Pied Du Cochon, a sugar shack in Mirabel, Quebec. A sugar shack (or Cabane a Sucre as it’s known locally) is an annual spring tradition that coincides with the running of maple sap. A meal based around maple syrup is served. In addition here we have a maple sausage, pate and chicken liver and fried maple pig skins. The headcheese was delicious.
