  1. Used a meatloaf mix that the butcher sells.

    Mix:
    2 lbs meatloaf mix (or beef and bulk pork sausage and add an egg)
    1 c raw rice
    1 c pregrated carrots
    1 c diced yellow onion
    1 bun parsley chopped.
    1/2 tube tomato paste
    1/2 tsp smoked paprika
    Splash of water to loosen it up a little.

    Wrap in whole leaf sauerkraut (find this at Slavic markets).

    Arrange in a soup pot, cover with broth, use a plate to weigh it down. Simmer about 45 minutes (watch the rice, once it’s plump, everything else is done).

    Optional, add chopped bacon to the filling.
