

Aged over 90 days, this is a STRONG blue cheese. Melts down nicely to a 50/50 crumbly and creamy texture. This was a taste of Italy in every bite. I burnt the toast a little bit trying to pull out some caramelization coloring but it was divine regardless. This cheese is aged for 90 days as opposed to 60 days for regular blue cheese which gives its deep and robust flavor and aroma. It is indeed, delicious. Huge fan.
