in the past i’ve always preferred soft cheeses; bloomies, burrata, anything i can spread on a baguette or some good sourdough. lately however, i’ve been trying to expand my horizons towards some of the firmer bodies; i had been curious abt mimolette for a while bc its flavor profile sounded like smth i would enjoy and today i finally decided to give it a go.

it’s like a parmesan on steroids. sweet, savory, caramelly, firm but just soft enough to nibble on but with some of those crunchy crystals in there—OUGHHH. holy fucking shit. i can’t believe it was ever banned this is incredible
