We made these tasty fishcakes. I thought I would serve them with either the Mango chutney or the tzatziki, but the two combined were so delicious with these fishcakes!

    Fishcakes
    Ingredients:
    6 potatoes, mashed
    ~200 g salmon pâté (leftovers)
    ~200 g fresh salmon, grilled
    Butter (for grilling salmon)
    Lemon juice
    Salt and pepper
    1 small carrot, finely diced
    Red and yellow peppers, finely chopped
    Red onion, thinly sliced (small amount)
    Flour
    Breadcrumbs
    Sesame oil (for frying)
    Method:
    Cook the salmon:
    Grill the fresh salmon in butter with a squeeze of lemon juice, salt, and pepper. Flake into pieces.
    Prepare the base:
    In a large bowl, combine mashed potatoes, salmon pâté, and grilled salmon.
    Add vegetables:
    Mix in carrot, peppers, and red onion.
    Season:
    Add lemon juice, salt, and pepper to taste.
    Bind the mixture:
    Add flour and breadcrumbs gradually until the mixture is firm enough to shape into patties (not too soft).
    Shape:
    Form into fishcakes.
    Cook:
    Lightly bake them first to firm up
    Then pan-fry in sesame oil until golden and crispy on the outside

    Tzatziki
    Ingredients:
    250 ml yoghurt
    1 small cucumber, grated or finely chopped
    2 garlic cloves, minced
    1 spring onion, chopped
    Method:
    Mix all ingredients together.
    Let it sit for a bit so the flavors develop.

    Mango Chutney Sauce
    Ingredients:
    1 mango
    Plum sauce (to taste)
    1 dried chili (adjust to spice preference)
    Ginger (to taste)
    Garlic (to taste)
    Thyme
    Coriander seeds
    Lemon juice
    Vinegar (use sparingly)
    Method:
    Blend or finely chop all ingredients.
    Adjust sweetness, spice, and acidity to your liking.
