


One of my favorite meals! Super easy to make and very filling. It comes together in about 40 minutes. It's a great dish to make if you have leftover baked chicken. You have to temper the eggs at the end and it makes it rich and creamy with no cream or dairy. This makes about 5-6 servings, so about 250-300 kcal per bowl! The measurements are for the whole pot (1514 kcal).

Avgolemono is one of my top 5 favorite soups! I like it without dill and carrots, though. I haven’t figured out the calories in my version yet… I should probably do that.
ok the lemon and dill combo in soup is so underrated, i make something similar but with orzo instead of rice and it hits different. also throwing in a little bit of egg drop at the end makes it almost avgolemono-ish which is like… peak comfort food imo
