How's it look? The burgers are about 6 inch in diameter, I had to force myself to finish it. I am so full.

It all looks really good.
On a side note been years since I’ve worked in a restaurant but if you’ve never worked in the food service before just know it’s a hell of a lot of work. Especially if you’re going to be making all of that from scratch.
Burger and tots look great, but the aioli is broken. Nail down the emulsification of that and you’re looking great

Making a burger is a lot different than making 500.
I’m very curious on your recipe for cheese. Mine rarely looks that consistent.
