St. Stephen is a triple crème from Four Fat Fowl out of the Hudson Valley. Got button mushroom and cellar notes on the rind which was unexpected since the label says sun-dried wheat and sweet cream. The paste is delicate, sweet cream with light citrus. Not as buttery as you'd expect from a triple crème tbh.

The best part is the texture contrast. Center was almost cream cheese-like at 60F while the edges had this gorgeous creamy thing going on with sweet bread and citrus flavors. Two totally different cheeses in one wheel.

Paired it with some good honey and sourdough and honestly that's all it needs. The honey wakes up the firmer center perfectly.

14/20 on my scoring system. Would probably buy again for guests. Not my holy grail yet but a really nice cheese.
