Second take on the lemon n liquorice combo I posted while ago.

Liquorice mousse, lemon gel, lemon sherbet, tuile and dusting sugar mixed with liquorice powder.

  1. I love liqorice, so I would absolutely devour this.

    I actually like the plating, it gives a slight brutalism vibe. You could either lean into that even more and remove the flowers, but I guess the mirror glaze idea will appeal more to people.

    I would however love this even more if you switched lemon for raspberry, both flavour- and colourwise. It’s a common flavour combo in my native Scandinavia, and the colours will pop.

    Idk what kind of liquorice you use, but I can definitely recommend you to play around with at least a small element of salmiak, maybe as a finely ground crisp, think praline, instead of the powder.
