Sauté a good amount of garlic in a pan, add a shit ton of chestnut mushrooms (they taste the best to me but any is fine!) and get them going until they’re super brown and tasty looking. Add some porcini/mushroom stock, just enough to add a bit of moisture but you don’t want it swimming! Cook this off for a bit more until your spaghetti is mostly done and then add some alpro dairy free cream (or any brand really) according to your serving amount! I made enough for two people, so used about half a cup of cream.
We don’t like ours super saucy but if you do you can up or even down the cream measurements. A tip also if is to add some spaghetti water if the sauce reduces down too much, to loosen it up again.
It’s actually delicious!! It’s one of those people’s you can really hear people enjoying, and it’s a great comfort food ❤️

Not OP, but this is my all time favorite vegan ~~stroganoff~~ recipe. I’ve made this countless times, and I always have to portion myself so I don’t just stand over the pan and eat the entire thing. I do a lazy and way higher calorie version of this, basically just mushrooms and soy cream. 🤭 Maybe i should try this instead.
