    Oh yeah and I also added confit garlic cloves on top. I did not bake, I broiled this. Made the sauce in the pan and then layered the squash, tomato, and eggplant.

    The garlic came out nice and fried. There was a little bit of space leftover in the center so I filled it with a pile of the fried garlic. Yum.

  2. It’s been ages since I made a proper layered one like this. Yours looks great, OP. It has given me a craving.
