Cheesemaker here!! They’re tyrosine crystals! They appear because as cheese ages, it loses moisture and the amino acids start to break down. One of those amino acids is tyrosine, and since tyrosine likes to hang out with other tyrosine, they find eachother in the cheese and create these delicious nuggets of flavor 😋

There’s a place we stop at on occasion. They carry a 12 year old New York Sharp Cheddar. I can actually eat it without using lactaid pills because there’s pretty much no lactase (?) left. It has these lovely crystals in it.
