LetsCookie on March 23, 2026 11:01 pm Full instructional video will be posted to my profile tomorrow Oatmeal Cream Pies Yield: 22 cookies (11 sandwiches) Ingredients 1 stick butter, room temp 3/4 cup dark brown sugar 1/4 cup granulated sugar 1 TB molasses 1 egg 1 TB vanilla extract 1 1/4 cups all-purpose flour 2/3 cup quick oats 3/4 tsp baking soda 3/4 tsp cinnamon 1/2 tsp fine salt Filling 1 stick butter, room temp 2 cups powdered sugar 3–4 TB heavy cream 1 tsp vanilla extract Method Cream butter, brown sugar, granulated sugar, and molasses until smooth and slightly fluffy Add egg and vanilla, mix until fully combined Whisk flour, oats, baking soda, cinnamon, and salt, then add to mixer on low speed and mix just until combined Scoop with a 0.75 oz scoop onto parchment-lined trays Bake at 350°F for 10–12 minutes Cool completely For the filling, mix butter and powdered sugar together first until smooth Add vanilla and whip the hell out of it until light and fluffy Add heavy cream at the end until smooth and pipeable Pipe filling onto the flat side of one cookie, then sandwich with another so the rounded tops are facing out
