I was recently in Italy (and Greece but doesn't matter for this) where I bought this block of Parmesan from a local seller that had carved that block out of a cheese wheel. I've seen similar posts to this but none of them address what I should do if the seller has already vacumn sealed it. He gave me this paper (I'm pretty sure its the white paper in the image) that I'm supposed to use for storing it, but some of the results that I'm seeing online say to vacumn seal it for long term storage. But, some of the other results that I'm seeing only are saying not to store it in plastic because it will delevop a plastic-y taste. And I also don't know how small of pieces I should cut it up into, or where I should store the pieces. Essentially, how should I go about storing this block of cheese for a while? I'm planning to use it at some point in the future but I don't know exactly when. Any help is greatly appreciated
