  1. Onion Rings:

    Ingredients -> 1 large onion, 80g flour, 15g cornstarch, 120g cold sparkling water, 2g paprika, 75g breadcrumbs, vegetable oil for frying.

    Method -> Slice the onion thickly to obtain thick rings. In a bowl, mix the flour, cornstarch, paprika, and sparkling water until smooth and thick (not runny). Dip the rings first in the batter and then in the breadcrumbs, pressing lightly to coat. Arrange the rings on a tray and let them rest in the freezer for 30 minutes. This step will prevent the crust from peeling off during cooking! After 30 minutes, fry the rings in hot oil until golden and crispy.

    Zucchini Fritters:

    Ingredients -> 1 large zucchini or two small ones, 1 egg, 100-120g flour, Parmesan cheese (depending on how you like it!), a pinch of baking soda dissolved in a tablespoon of lemon juice (this will make them light), enough water to form a thick batter, salt, and pepper.

    Method -> Grate the zucchini using large holes. Tip: Squeeze them well with a cloth to remove excess water, so the fritters don’t become soggy. In a bowl, combine the egg, Parmesan cheese, salt, and pepper. Dissolve the baking soda in the lemon juice (it will foam) and immediately add it to the batter. Add the flour and a little water, gradually, stirring until you obtain a thick batter. Finally, add the zucchini and mix well. Fry in hot oil for a few minutes on each side until golden brown.
