Since no one else mentioned this, according to google – The Denver steak is a well-marbled, tender, and flavorful cut of beef from the chuck primal, specifically the serratus ventralis muscle under the shoulder blade. Unlike most chuck cuts, this muscle is less used, resulting in surprising tenderness that rivals premium steaks like the ribeye. It was identified in the early 2000s by the Beef Checkoff Program as part of an effort to find value-added cuts from the chuck primal.
