Man, I can almost hear the crunch from here. Those onions on the blue cheese slaw are next-level, and that egg salad on toasted brioche? Yes please. You’ve got me craving a fancy lunch now. Recipe for either (or both) would be legendary. Thanks for sharing this beauty!

Egg Salad – this was improvised so it’s a little wacky
Hard boil eggs > cut in half > punch out all of the egg yolks into a bowl and whip with all ingredients until smooth > grate the egg whites and then fold in
– plenty of mayo
– dijon mustard
– liquid from jared pepperoncini
– dash of hot sauce (or three)
– dash of onion powder
– dash of garlic powder
– msg
– salt/pepp to taste
Blue Cheese Salad
Dressing
– Blue Cheese > crumbled
– Buttermilk
– Mayo
– Sour cream
– Onion powder
– Garlic powder
– White wine vinegar
– Chopped dill
– Salt and pepper to taste
Iceberg lettuce > chopped into 1/2 to 3/4” strips (not a ton of flavor but maximum crunch)
Shallots > thinly slice (i used a mandolin) > fry at 325F and constantly swirl. If you look away they will burn. Then drain onto paper towel and salt right after frying
Green onions > thinly sliced
Bacon > 400F in oven until crisp
Toss iceberg lettuce in a separate bowl with blue cheese then place in serving bowl. Top with your green onions, fried shallots and extra blue cheese crumbles if you like
