  2. We used to made these for burger nights at a place I used to work.

    Bison or sometimes elk. For cheese we’d do tallegio or raclette or roblochon. Similar melting profile, if you’re ever looking to mix it up.

    Simple is best, IMO. I like a salad on the side, but I don’t want it on my burger.

  3. Ok. I gotta ask about the beef tallow fries. I’ve made them three times now and I just don’t think I’m getting any flavor out of the tallow. It’s so filtered and purified, I’m wondering if it’s worth it. Unless I have a restaurant and can make my own, I’m doubting its use as a home cook.

  4. Love carmelized onions on a burger – and that there’s no lettuce, pickles, etc. to cut the flavor.
