Sautee some onion's carrots garlic and celery in a little olive oil, cut off all the meat from a leftover roasted chicken, keep that fat!, toss the carcas in the pot with the veggies and add some stock or broth and water until its full up, cook for 30 mins, remove carcass, add chopped meat and noodles, boil until noodles are just done, add salt and pepper to taste, throw a bunch of chopped parsley on top and yoy got yerself a healing potion. Definitely serve with toasty bread and butter.

    Is 30 min of the carcass being in enough time for it to do anything other than adding surface level flavor?

    I throw half a bag of kale in there too. My daughter loves it and she’s not big on vegetables

    Leftover? That looks like a whole, cold chicken? I love making homemade chicken noodle soup!

  4. Good stuff. I always cook the noodles separately and then combine when it’s time to eat, especially if I’m making a large pot of soup. Cooking the noodles in the soup releases the extra starch into the broth, which IMO makes the broth worse and if there’s leftover soup, the noodles can overcook and get mushy
