1 fennel bulb

4 chicken thighs on the bone, skinless

3 squid tubes

200g prawns

200g risotto rice/paella rice

2 bay leaves

2 teaspoons smoked paprika

0.2g saffron, steeped in 1 tbsp of hot water

3 tbsp olive oil

175ml white wine*

Chicken stock, fish stock or water

Salt and pepper

Sprigs of thyme 

Parsley and lemon wedges to serve
