I like hearts of palm pasta. IMO nothing comes close to the actual thing so I have given up eating dishes with it and trying to convince myself its similar. I use enoki mushrooms in hot pot instead of noodles bc theyre kinda noodle like when cooked but thats abt it

I would prefer to have the real thing by planning ahead to make room for the calories

similarly but not quite, I do yakisoba with half real noodles and half bean sprouts sauteed in gyoza sauce (soy + vinegar). cooking them down enough makes them pretty indistinguishable. now I’m wondering if I should try those in soup, as well.

We don’t have heart of palm stuff here, but I was SO happy to find out that actual fresh udon is just around 120 cal per 100 gram!! Such a game changer!
