This is a simple batch of Hello Panda–style chocolate-filled cookie bites we made at home.

They’re small, crisp cookie shells with a chocolate center — inspired by the classic snack, but baked fresh.

We made a triple batch because they disappear fast.

Crunchy on the outside, melty chocolate inside, and perfect as a bite-size treat.
