My wife decided to experiment with these this weekend and they turned out amazing. Was a long 12 hr wait but well worth it. She brought the blueberries to a simmer over a low/medium heat with lemon juice and sugar and thickened it up with a slurry. Rolled out the dough, spread the filling and zested lemon over it, rolled up, cut, and left to slow rise in the fridge overnight. Topped with a streusel before baking and then drizzled with icing once cooled.
