    I’ve been slowly cooking my way through traditional dishes from all over the world for 3 years now, with almost 450 so far.

    I made Cà Ri Gà, a fragrant Vietnamese chicken curry. It’s built around lemongrass, garlic, ginger, and warm curry spices, simmered with coconut milk, with potatoes and sweet potatoes soaking up all that flavour. It’s comforting, slightly sweet, gently spiced, and really moreish.

    Served with jasmine rice to mop up the sauce, it ended up being one of those dishes I kept going back for “just one more bowl”. It’s easily one of my favourite Vietnamese dishes I’ve cooked so far.
