    I am a big fan of oatmeal, but decided to try something diffrent this week. This is the last serving of quinoa porridge I batch cooked and enjoyed several times throughout this week. It is mildly sweet; with a nutty flavor and a texture similar to grits. I adapted the recipe from this website – https://desireerd.com/quinoa-breakfast-porridge-with-almond-milk/

    Here are my adjustments. I used three cups of 2% milk and one cup of water. I used just one tablespoon of maple syrup because; as I prefer the flexibility to add and vary the sweetness with my toppings.

    As written, the recipe was to yield 4 servings. I got 5 hearty servings from the recipe and the calories have been calculated based on my yield and ingredient substitutions.

    1 bowl quinoa porridge (a generous 2/3 cup portion) ~ 220 calories

    50 grams fresh blueberries ~ 30 calories

    15 grams walnuts, chopped ~ 100 calories

    1 tablespoon maple syrup ~ 55 calories

    Splash of half and half ~ 28 calories

    Tea with milk and sugar ~ 80 calories

    PS My Christmas tree is still up and I am still sipping my morning brew from my holiday mug. Please don’t judge me.
