I know a lot of vegans don’t like things to seem too “real”, but for me plant-based is an ethical/environmental choice – not because I stopped liking meat etc!
The tofu “lamb” turned out great. I sliced firm tofu into thin strips, froze them (changes the texture to something much more ‘meaty’), then marinated them in a mix of soy sauce, smoked soy, sherry vinegar, olive oil, garlic, oregano and pepper. (A few hours will do but the longer they marinate, the better!) I then fried them on med-high with garlic infused olive oil; once they’re dark and crispy either side I put the lid back on, turned down the heat and let them caramelise a bit.
The fillings are chips (done in the air fryer) shredded lettuce, sliced tomatoes, soaked red onions, and a tzatziki I made with soygurt.
