I should’ve done the full bake on the bottom rack…I didn’t. So some trial and error resulted in overcooking the top just a bit to get a crispy undercarriage. I was just using a basic aluminum sheet pan which seemed to not transfer heat well enough. After regular cook time I battled getting it out of the pan onto a wire rack and then put that straight on the bottom rack of the oven for 7-10 minutes to crisp it up.

    Will absolutely make it again!
