  1. Recipe – Makes ~7qts

    Marinade –

    * 4 cups water
    * 1 tbsp chicken better than bouillon
    * 1 tbsp cumin
    * 1 tbsp chili Powder
    * 1 tbsp chipotle Powder
    * 1 tbsp kosher salt
    * 2 tsp garlic powder/granules
    * 2 tsp smoked paprika
    * 2 tsp Mexican oregano
    * 1 tsp black pepper

    Soup –

    * 8 chicken thighs, bone in, skin on
    * 1 green bell pepper
    * 1 red bell pepper
    * 1 poblano pepper
    * 1 yellow onion
    * 2 cans black beans
    * 2 cans diced tomatoes w/ green chilies
    * 16 oz cream cheese
    * 4 cups water + 2 cups marinade
    * 2 tbsp corn starch
    * 2 tbsp butter

    Rice –

    * 1.5 cups extra long grain rice
    * 2 large Roma tomatoes
    * 4 cloves garlic, whole
    * 1/2 yellow onion
    * 3 tbsp butter
    * 1 tsp kosher salt
    * 1/2 tsp garlic powder
    * 1 tbsp chicken better than bouillon
    * 2 cups hot water
    * A few sprigs of fresh cilantro
