


I got some 17 year aged “XXX” sharp cheddar from my favorite local farm stand, have been enjoying it. It definitely quite sharp but very pleasant, crumbly but still a little creamy when eating, and has a good amount of calcium citrate crystals. I posted about some even older (maybe) cheese I got from the same place last year and a few folks cried foul, but the owner of the farm stand says they get their aged cheese from a central New York supplier who has been in the business a very long time. Plausible? Either way it’s good!

The Frumunda Cheese from the town of Deez in the older post had me cracking up until I had tears in my eyes. I needed that laugh, so thanks for this post to lead me there.
I’m not sold 100% either way. I’ve had 8 year farmhouse cheddar that had a pretty creamy mouth feel with an edge at the end. I mean with the right conditions it’s feasibly possible. Price point is debatable. If it were coming directly from the maker that’s not necessarily impossible. From a store retailer though one would expect it would probably cost upwards of $30-60/ pound. The crystals are a good indicator of age. I checked out the cheeses they sell and it looks like they get their aged cheddar from 1000 islands River Rat cheese co. That sell aged cheddar up to 20 years old. On their own website they’re selling their 16 yr for $34/lb and their 20yr for $50/lb. So unless this farm stand is buying a large brink and getting a good deal or just taking a low margin, I’m not buying the price. For what it’s worth taste is everything. If it’s really delicious then potentially worth $25/lb. Would be interested to know for sure on the real age though.
