Ny strip, pickled onions, aji-gochugaru aioli, salsa macha , cilantro powder, the steak is crusted with dried chili and garlic ash! It Needs something I’m not sure though!

    gloopy sauce, looks oily/split and like too much. in general odd numbers are more appealing, and I’d think the jalapeno looks better on the top. Comments about the filtering I agree with as well

  4. You need to build height. All of your elements look and sound beautiful but it sits too flat on the plate. With the cultural elements you described a ring mold with some rice as a base would work well and you could incorporate one of your existing flavors into it so you don’t dilute the dish. Also a tiny bit of micro cilantro would bring some explosive green that your chiles aren’t able to pull off.
