I keep so many beef Wellingtons from Christmas. I wonder why?

I recently made a comment on another post that I have yet to see a perfect wellington, as getting every component and aspect totally flawless takes some serious finesse
However, this is easily the closes I’ve ever seen.

I agree with the dude that said this was near perfect. Rest it a bit more next time but wow. Better than I could do (by a lot). I would be so proud if I was you.
