    Ingredients

    * 2 tbsp olive oil
    * 1 small onion, diced
    * 2 carrots, diced
    * 2 celery stalks, diced
    * 2 cloves garlic, minced
    * 1 zucchini, diced
    * 1 cup green beans, chopped
    * 1 can cannellini beans, drained and rinsed
    * 1 can diced tomatoes
    * 4 cups vegetable broth
    * 1 cup small pasta such as ditalini
    * 1 tsp dried oregano
    * Salt and black pepper to taste
    * Fresh basil for serving

    Directions

    1. Heat olive oil in a large pot over medium heat.
    2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
    3. Stir in garlic and cook for 30 seconds until fragrant.
    4. Add zucchini, green beans, beans, tomatoes, broth, oregano, salt, and pepper.
    5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
    6. Add pasta and cook until tender, stirring occasionally.
    7. Taste and adjust seasoning. Serve hot with fresh basil.

    Note: Minestrone thickens as it sits. Add extra broth when reheating if needed.
