Every year Jasper Hill Farm does a special Harbison (which, in its regular version, is already one of my favorite cheeses), and this year they’re doing one washed with Jacques Bardelot Champagne Brut.
Very glad that the one that I got today is already ripe, super buttery, spoonable paste, classic Harbison indulgence plus the nuance of champagne.
This is one of Whole Foods’ “12 days of cheese” leading up to Christmas, so go get it while it lasts!! Wishing you all a happy holiday 🙂
