Tried a mini-quiche in a cast iron omelette pan

Preheat oven to 400F

Dough – 100g all purpose flour, 75g Kerrygold butter, 40ml water – keep them all cold, make the dough and roll to a circle.

Place dough in the pan, put some weight on the dough (foil or parchment paper with rice or dry beans etc).

Bake for 20 min, then remove the weight and bake for another 10 min.

When baking…

Make the filling – half a shallot diced, 1-2 thin slices of ham diced, about 70-80g cheese – whatever you have – cut up into small pieces.

Make the liquid – in this case, take a cup, beat 2 eggs in it, add half a cup of heavy cream, top off to one cup with milk, some ground pepper, mix well.

Take out the par-baked crust, layer the cheese on the bottom, then the ham and onions on top and slowly pour the liquid to cover.

Lower the temperature to 350F – IMPORTANT!

Bake for another 30 minutes. Time may vary depending on the oven. Take it out when the liquid jiggles very very slightly but not too much, and an inserted knife comes out clean.

Rest for an hour or so and serve.
