I had some leftover sauce, and I've been making an effort to reuse leftovers so I made eggs in purgatory.

Couldn't be easier, heat the sauce, crack some eggs in once it's simmering.

Add some cheese if you'd like (parm, pec, but anything you like could work).

Serve with some bread or toast.

  1. Haven’t tried with marinara. I have a version I do with ranchero type sauce, diced up meat and potatoes. So yummy.

    Might have to try this version next time we do spaghetti.
