    Hey !! 👋 So, a week ago I hosted my own thanksgiving for the first time since buying a house and everything turned out good.

    The past week we’ve taken it real easy, and not bought any groceries since we are going on vacation tomorrow morning. I successfully have used up all the meat in my freezer and most of my vegetables.. Costco’s gonna get a ton of my money when we come back home! ☺️

    First three photos are from our BBQ night- while fiancé was at work I fired up my smoker and put on a rack of St. Louis Ribs, 3 small beef back ribs from some ribeyes that we ate, and 2 beef plate ribs that had been in our freezer for 2 months. Served with maple-bacon brussels sprouts and it was incredible. We definitely are going to start doing more date nights with BBQ since we have gotten some patio furniture now. It was amazing!! 🩷

    Fourth photo is a dinner I made just for my fiancé- that night I made myself baked buffalo cauliflower and broccoli (girl dinner) and he was not so enthusiastic.. so he got a ribeye cooked medium, his preference, with some cilantro lime rice. He said it was delicious. Forgot to get a picture of the buffalo cauliflower.

    Fifth picture is chicken enchiladas – these were super good but I made a bit too much and had to waste some food which made me sad! I cooked up some chicken with taco seasonings, shredded and mixed it with a can of Green Chilies, cilantro, cheese, and a mix of caramelized onions and bell pepper. I make my own tomato-based enchilada sauce and use whole wheat tortillas. It was really yummy.

    Sixth photo is another steak (oops) with chimichurri and pan-fried potatoes. 30 minute meal that’s good af.

    Seventh meal is from a day where I was super sick! I made myself pastina with chicken stock, an egg, and parmesan cheese and it cured my body and soul. I love this when I don’t feel my best 💙

    Final picture is just some bacon and fried eggs!! The yolks were so bright. Paper plate because I’m trying to keep the house clean before we travel. Tonight I’m making us bulgogi beef with white rice, and then I’ll be out of rice too.. dang. Alright everyone, have a great week 🧡❤️
